Our Spirits
Independence Bourbon
Bourbon can be made in any state in the USA and we looked across the United States to identify 4 distilleries producing distinct bourbons that we would blend to make our spirit. Ranging from as far north as Ohio and as far south as Texas each one adds a unique element to small batch bourbon.
Our process is to carefully taste a range of barrels, before choosing those that meet the needs of each batch. We the age in our warehouse barrels to further enhance the flavor, complexity and depth. We then slowly add water to bring the proof of our blends down before bottling. This process of “proofing” for takes at least 3 weeks – the slower water is added, the smoother the whiskey. We do not use chill filtration, or add caramel coloring, choosing instead to keep our whiskies natural.
American Gin
We work hard to source some of the finest botanical herbs from around the world. We take neutral spirit and botanical herbs, combine them in the still, and let them soak overnight. The next morning, we begin gently heating up the still, and once the vapors rise, we start to slowly collect the spirit. The still works like a prism in that it takes light and splits it into the color spectrum.
Our still splits the aromatics of each herb based on their volatility and carries them over in order. This helps us know when we are getting close to the end of the still run, and it’s time to stop collecting the gin. After we’ve finished distillation, we slowly add water to bring the gin down to bottle strength.
American Vodka
We craft our vodka with pride, using a Corn neutral spirit base. Quality is paramount in every step of our process. Traditional pot stills and rigorous taste-testing are integral to our approach. This demands skill and effort, which we believe is worthwhile.
Our Vodka begins with a carefully selected corn-based neutral spirit. We combine it with pure water and distill it using traditional pot stills. Through slow and gentle distillation, we separate the initial and final portions from the prized middle section, known as the ‘hearts.’ The other parts known as ‘heads’ and ‘tails’ are set aside. This precision enhances the spirit’s quality, even if it means sacrificing a significant portion of the final product.
We firmly believe that this approach greatly improves the vodka’s overall quality and justifies the associated expense. Enjoy the result of our hard work in every sip.
Eagle Eye Rye
We develop the flavor of our whiskey by blending (a craft unto its own)multiple whiskies into our unique house style. We do this by choosing how old/mature the barrels are and combining spirits from different distilleries/states. We’re looking for whiskies that showcase the very best of a particular style or are unique examples of bold, different flavors. We carefully taste a range of barrels before choosing those that meet the needs of each batch. We are also aging in our warehouse barrels for additional years to enhance their flavor, complexity, and depth. We slowly add water to bring the proof of our blends down to the strength that we are bottling at. This process of “Proofing” for us takes at least three weeks.
